ilani Adds Two Restaurant Partners to Roster for Spring Opening: Rose & Thorn and Longhouse

RIDGEFIELD, WA. (March 31, 2017) – ilani, Southwest Washington’s new gaming and entertainment destination, has announced two additions to its restaurant line up. Rose & Thorn, a high-end bar and restaurant, and Longhouse, a raw bar, sushi and noodle shop are the latest additions to ilani’s expansive food offerings.

“We are proud to have been selected as two of the elite restaurants within ilani,” said Shawn Ellis, founder and CEO of Rose & Thorn and Longhouse. “The location and setting of Rose & Thorn will allow us to showcase our unique twist on upscale handmade craft cocktails and homemade finished desserts, while the Longhouse boasts a more casual vibe with fresh sushi and seafood offerings. We are excited to share both with the guests of ilani and look forward to the grand opening in the spring.”

Serving “upscale international street food”, the 225-seat Rose & Thorn will feature six ‘al pastor’ spindles incorporated into one end of the main bar where hand-carved-to-order meats cook over open flame. The opposite end of the bar features a stylish dessert finishing station highlighting imaginative, miniature delicacies. Patrons will dine on steam-kettle-roasted seafood fresh from the waters of the Pacific Northwest, as well as other dishes incorporating locally grown, caught and crafted ingredients.

Rose & Thorn will boast an impressive bar program featuring a selection of bourbons and fine spirits. Aging, distilled spirits stored in authentic wooden casks will be utilized to concoct signature cocktails infused with local botanicals and fresh ingredients. The bar will also feature 24 beers on draft, including many popular local and craft brews.

Longhouse showcases ocean-fresh handcrafted sushi from the Pacific Northwest and authentic handmade noodle dishes, as well as a signature meatballs. A sociable atmosphere at the expansive bar, which extends 40 feet through the restaurant to accommodate up to 42 patrons, and features a sizeable array of sake, as well as many Asian and craft beers, and signature craft cocktails.

A floor-to-ceiling picture window dominates the space, bringing in natural light and breathtaking views. The Longhouse design displays original Salish artwork set amongst natural cut timber, black metal pendant fixtures, and ocean blue accents.
